I am the resident baker in my family and am in charge of desserts for pretty much every holiday. I love baking so much and I definitely get that from my aunt. When I was little and would have sleepovers at her house, we would always bake something. From brownies to cookies and cakes, to her special nut tarts, I always loved baking when I was there.

As I grew older and learned the powers of Pinterest, the world of baking only grew. Now, I try to make something different every holiday and try to make things as festive as possible. It's fun for me to do but also I like to try to make things nice for my family.

My mom yells at me every holiday to take it easy, not go so crazy and just try to make things a little easier on myself. I tend to stress myself out with baking; one Christmas, I baked so much I made myself sick (and threw up for days because of the sugar overload). Two Christmas' ago, I baked so much I passed out on my couch halfway through because it was so exhausting.

This year, I've made a vow to take it easy in that I'm not going to make any crazy concoctions. I'm keeping it simple.

I think it's important to note that I bake for Christmas Eve and Christmas Day (Christmas Eve is the big holiday in Italian families) and my family are not huge dessert people. Everyone is usually so full from dinner, they take a few bites of one or two things and I'm leftover with tons of sweets. Those are two other reasons I'm keeping it simple this year.

Here's what I'm planning...

Gingerbread Cookies

It's not Christmas without them, right? Over the years I've really grown to love the taste of gingerbread so I'm excited. This will probably be the most time consuming and difficult to make because I have to roll the dough out and cut the cookies just right. However, I'm not making the dough from scratch (do you think I'm crazy?) so that's a good thing.

I wanted to make cupcakes and I wasn't sure how to do peppermint chocolate cupcakes so I just went with gingerbread mix. I have some cream cheese frosting and I'll look for some Christmas sprinkles to top them off with. Fun fact: cupcakes are my all time favorite dessert. 

Chocolate Covered Oreos

This will another time-consuming dessert but oh, it's so worth it. I made them last year and everyone was so impressed but it's so easy. All you need is a package of Oreos and melting chocolate; add some sprinkles or a white chocolate drizzle on top and you have a festive, delicious, no-bake dessert. I may switch it up this year and get some peppermint Oreos if I can find them!

I am planning on making cookies but just some pull and bake ones; I have the classic Pillsbury Christmas Tree Sugar Cookies and new for this year, Pillsbury Ready to Bake Hot Cocoa Cookies

In the world of Weight Watchers, I haven't felt super deprived of anything, except maybe bagels and pastries, which I do not eat that often.

I can have a slice of pizza, I can have pasta, it's all well and good. However, when I saw this recipe floating around the Internet a few weeks ago I immediately jumped at it.

The Two Ingredient Dough is 6 points in total, which is a STEAL. Once you add toppings it is, of course, more, but I hardly count that if you use the right stuff.

I've never made a dough in my life and even though it's only two ingredients, it was still hard to make. There was a lot of kneading involved, and it makes quite a mess but it is so worth it.

What are the magical two ingredients you ask? They are self-rising flour and greek yogurt.

1/2 cup of each gives you a small, little dough that tastes pretty damn good.








So far, I've created multiple pizzas, garlic knots, and everything bagel knots. There has never been a better time to test out Trader Joe's Everything Bagel Seasoning than with some dough and butter.



Really, you can make anything with this dough; I wonder how it would taste/come out as just a regular loaf of bread.

Even though I have created little bagel knots, I haven't done actual bagel yet and I really want to try. That requires me boiling the dough before baking it and that's a big commitment for me.

In conclusion, this dough is delicious and very versatile. If you're not on weight watchers but still want a good, diet alternative I highly recommend whipping a batch of this up!



When I started Weight Watchers I knew I needed to find recipes for my favorite meals. I couldn't go without certain things and one of those things was macaroni and cheese. Sometimes I just get an intense craving for cheesy goodness and it cannot be stopped.

I searched Pinterest for a low point recipe as well as one that was easy to make. I love to cook, I love to bake but I hate when things are too complicated.

When I discovered this recipe, I knew that it would be good. It's only 4 points for 1 cup and 1 cup is more than enough. Also, 4 points is pretty decent for a lunch or dinner.

I have to say, this recipe is one of my favorite Weight Watchers recipes I've found. It doesn't taste like 'diet' food and I don't feel like I've really limited myself.



*I altered the recipe just a bit to my liking.

Ingredients

  • 1 1/2 cups of macaroni
    • I usually use more than this but do whatever your heart desires!
  • 1 can low fat-cheese soup
  • 1/2 can of water
  • 3/4 cup of low-fat milk
    • I use Almond milk
  • Handful of reduced fat shredded cheese
  • Handful of breadcrumbs





Steps
  • Cook the macaroni to your liking
  • Drain and return the pasta to the warm pot
  • Add the cheese soup, the water, and milk to the pot and mix well
  • Bring the mixture to a boil
  • Preheat oven to 350 degrees
  • Transfer pasta mixture to a greased, medium casserole dish 
  • Add shredded cheese and breadcrumbs on top of pasta mixture
  • Cook for 1-2 hours (or until just brown enough to your liking)
  • Enjoy! 


I like my mac & cheese extra crispy on top and a little burnt but you cook it however you like!

And remember, it's only 4 points per cup.

As I mentioned last week, I love sweets and carbs so trying to distance myself from all my favorite breakfast foods while I'm on Weight Watchers was going to be an issue.

I searched Pinterest high & low for breakfast recipes that would satisfy my hearty carb craving and when I stumbled upon these easy to make biscuits, I immediately made them. They are originally a recipe for Cheddar Cheese biscuits but I opt out of that and take off 1-2 points.

They are so delicious and you would never know the difference between these and regular, fatty biscuits.



It also only takes 2 ingredients: Reduced Fat/Heart Smart Bisquick and low-fat milk. I use Almond Milk because I just like it better and I like to think that it's fewer calories and a little more healthy than low-fat milk.

Ingredients: 

  • 2 cups Reduced Fat/HeartSmart Bisquick
  • 3/4 low-fat/soy/almond/fat-free milk



Directions:
  • Preheat oven to 350 degrees
  • Spray cookie sheet with Pam Cooking Spray
  • Combine ingredients and mix until you have a solid dough. *It will feel a bit sticky and like glue but that's ok*
  • Spoon drop the biscuits onto the greased cookie sheet
  • Bake for 10-15 minutes or until the tops start to golden 



There you go! You have some delicious, low-fat biscuits.

But what are the Weight Watchers points? 

The original recipe with the cheddar cheese and low-fat buttermilk say the biscuits are 3 points each. I knock off about 1.5 points because I don't use the cheese and I use almond milk.

Typically my biscuits are 2 points and then if it's a small biscuit, 1 point.

So there you go! Easy, low fat, low point biscuits to keep you on track with your diet/lifestyle.

Let me start off by saying how much I've always disliked soups. A weird introduction, right? But it's true! I never ate soup or stew because the texture freaked me out. What's the point of eating flavored water??

There was only one type of soup I liked and that was Baked Potato Soup (because it's fattening and delicious). I realized that the reason I liked it was because it was hearty and thick. I started to wonder what other types of soups I could whip up that I would enjoy...and was also healthy enough for my mom and sister.

I've gotten into the habit of cooking dinner for my family on Sundays since I'm home alone and both my mom and sister work.

I was searching Pinterest high & low for a soup recipe that seemed suitable for November weather and finally decided on this Chicken and Dumpling recipe.  I followed it pretty closely, if not exact.

The major plus side of this recipe? It's made for the Crockpot. That's usually what I stick to on Sunday afternoons because even though the prep is a little much, I can just sit back and let the meal cook without worrying about it.

Spoiler alert: this soup was DELICIOUS and I need to make it again ASAP.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 Tbsp of butter
  • 2 cans of Cream of Chicken soup
  • 14.5 oz of Chicken broth
  • 4 Grands Flaky Refrigerator biscuits



Steps:
  • Put chicken in crock pot and top with butter
  • Add Cream of Chicken soup & chicken broth 
  • Cover, cook on high for 4-5 hours OR low for 8-9 hours
  • Chicken will begin to soften as it cooks, after about 3-4 hours, shred the chicken with a fork while still in the crock pot
  • Cut up the biscuits into 9 pieces, place in soup after initial cooking time
  • Cook on high for another hour
  • Serve warm and eat the deliciousness! 



It was super simple to make and we had lots of leftovers-- I need to make this again ASAP!

On Sundays, I'm home alone all day. Both my mom and sister are at work so I usually have the most relaxing day on planet earth and I cherish my Sundays with all my heart.

Because I'm home all day with Gossip Girl on Netflix and the only real responsibility of blogging to keep me busy, I sometimes experiment with recipes. I'll make myself a fancy, aggressive breakfast and I've just started cooking dinner for my family.

Well, last week I made a kick ass Loaded Cauliflower Soup in the Crock Pot but forgot to take photos so we'll wait on a blog post on that. That's what I originally had planned for today but then I also forgot that I made dinner Monday night too.

I was off last week for Columbus Day and decided to try my hand at another recipe and this was even more delicious and easier that the soup.

My mom wanted something healthy, while I wanted something flavorful and easy. That is how Garlic and Brown Sugar chicken was born.

It sounds kind of gross but my goodness it was tasty. It had a sweet, but not overpowering taste -- similar to what a teriyaki sauce tastes like.

And like I said, it was ridiculously easy.

Ingredients:

  • Chicken of your choice (I used thin sliced chicken breast cutlets) 
  • 4 TBSP of Brown Sugar
  • 2.5 TBSP of chopped garlic (I didn't have cloves but the original recipe calls for 4 cloves) 
  • 3 TSPs of Olive Oil






To Do:
  • Preheat oven to 400 degrees 
  • Grease a baking pan (I used cooking spray -- nothing better!)
  • Pour the 3 tsps of olive oil in a heated sauce pan
  • Saute the garlic in the olive oil until it becomes soft 
  • Place chicken in greased baking dish and season with salt & pepper
  • Take the pan off the heat and combine brown sugar with garlic
  • Take a spoon or fork and spread the garlic & sugar mixture on both sides of the chicken
  • Bake for 40 minutes (I cooked them until the chicken cutlets were brown, crispy, and almost burnt)
Uhh, these were DELICIOUS and I will 100% be making this constantly this winter. How easy was that? I mean, only a few steps and ingredients you should have in your house.

Over the past few weeks, I've been really into Pinterest recipes. Sometimes I get bored at home and want a break from blogging, beauty tutorials, and Netflix. 

Sometimes I also don't really have an appetite for the usual things. I want to eat something different so combining that with boredom and countless recipes at my fingertips and I'm basically Rachel Ray.

A few weekends ago, I was home alone and utterly bored. I was going to order in dinner but then decided that I had enough time to whip up something myself. I have my Pinterest board filled with recipes but I knew there was something that I had been meaning to make and I had all the ingredients in my fridge.

(That's the hardest part about wanting to cook more...you don't always have everything you need on hand.)

Gouda Macaroni and Cheese....otherwise known as heaven.

I'm not trying to quote "She's the Man" but I really like Gouda cheese so combining that with a classic recipe is basically a done deal.

This is the original recipe and I pretty much followed it step by step. 

I made a few changes...I used almond milk instead of regular milk and used half white elbow pasta and half whole wheat.

To grate the cheese, I used my Magic Bullet. It took a little longer than I would assume a regular food processor would take but it got the job done.

What you need:
-2 cups of Pasta (I pretty sure I used more than two cups)
-2 Tbsp unsalted butter (I used 'I Can't Believe It's Not Butter)
-2 Tbsp flour (I think I used a little more flour just to thicken the sauce up)
-2 cups of milk (almond milk)
-2 cups of grated Gouda cheese and a little more to top it off
-Salt and pepper

Cooked pasta
Grated Gouda cheese
Directions:
-Boil pasta to al dente finish
-Set oven to 350F
-While pasta is cooking, melt the butter in a pan, add the flour and let it simmer. Make sure to keep stirring.

-When you have a smooth consistency, add the milk and whisk it until the sauce is thick.
-Take the pan off the stove and begin to stir in the cheese, slowly. Once the sauce is smooth, add salt and pepper.

Combine the pasta and cheese sauce
-Once the pasta is finish, combine all the cheese and pasta and then pour in an ungreased baking dish.
-Bake 30 minutes until it's golden brown; halfway through, sprinkle more cheese on top and cook until even more browned.

I have to say, this was delicious. It had a sharp taste, from the Gouda and it was very rich because of the thick cheese sauce. I was honestly surprised at good it was because I have a tendency to mess things up once and while.

I will definitely be making this recipe again! 

What is one Pinterest recipe you've been wanting to try?



Is this a new series? I have no idea but let's roll with it and see.

Since I've been home from school, especially since the weather has gotten colder, I've felt the need to cook more. Sometimes when I'm home, bored of Netflix and my computer, I'll log onto Pinterest and see what I could make.

Honestly, I've made some pretty good things off Pinterest lately and I'm super proud of myself! Pinterest makes everything look so easy so when you finally do make something successfully, it's a big deal...right?

These breakfast cups that I'm about to tell you about is by far my favorite recipe because it's the easiest. It's basically full proof, you cannot mess it up.

I love breakfast. Breakfast is my favorite meal of the day...words cannot explain it. I will pick breakfast over anything and I love finding new ways to make it. 

Over the past few months I've seen so many variations of these "breakfast muffins" and I even attempted one last year but I like these so much better. 

Bacon, eggs, cheese, and crescents all in one neat little package...seriously what more could you want?

This is the original recipe I found but I changed mine up a little bit. This recipe makes 12 muffins, perfect for on the go breakfast or just something different from your standard bacon and eggs.

This recipe isn't an exact science. You really can do whatever you want. If you don't want bacon, use something else, just more or less cheese—seriously, whatever you want! I won't tell anyone.


What you need:

6 eggs
8-12 strips of bacon (depending on what you want)
Shredded cheddar cheese
1 package of crescent roll dough

Directions:

Spray muffin tin with cooking spray, thoroughly

Preheat oven to 350 degrees


Scramble 6 eggs with a little bit of milk

Cook the bacon to your liking, whether it's in the microwave or oven

Roll out the crescent roll dough onto a cutting board, making sure there are no spaces between the dough. Make the dough one complete sheet, not separate pieces


Place the dough pieces on the bottom of the muffin pan, bringing them up on the sides as much as possible but making sure there are no tears. If there is and you have left over dough after covering each pan, you can add the extras on the bottom.

Place bacon strips on top of crescent dough (I usually cut one strip in half and place the two pieces in the pan) 


Pour egg mixture (as much as you want) into each pan


Sprinkle cheese (as much as you want) onto the top

Place in oven, bake for 15-20 minutes, until cheese melts and you can clearly see the egg has cooked. 

Viola, you are finished!

Like I said, you can substitute items or add more or less of each ingredient. It all depends on your mood and taste... you really can't mess this up, promise!

I've made these a few times and each time they come out better and better. They are truly the perfect breakfast!
