Over the past few weeks, I've been really into Pinterest recipes. Sometimes I get bored at home and want a break from blogging, beauty tutorials, and Netflix. 

Sometimes I also don't really have an appetite for the usual things. I want to eat something different so combining that with boredom and countless recipes at my fingertips and I'm basically Rachel Ray.

A few weekends ago, I was home alone and utterly bored. I was going to order in dinner but then decided that I had enough time to whip up something myself. I have my Pinterest board filled with recipes but I knew there was something that I had been meaning to make and I had all the ingredients in my fridge.

(That's the hardest part about wanting to cook more...you don't always have everything you need on hand.)

Gouda Macaroni and Cheese....otherwise known as heaven.

I'm not trying to quote "She's the Man" but I really like Gouda cheese so combining that with a classic recipe is basically a done deal.

This is the original recipe and I pretty much followed it step by step. 

I made a few changes...I used almond milk instead of regular milk and used half white elbow pasta and half whole wheat.

To grate the cheese, I used my Magic Bullet. It took a little longer than I would assume a regular food processor would take but it got the job done.

What you need:
-2 cups of Pasta (I pretty sure I used more than two cups)
-2 Tbsp unsalted butter (I used 'I Can't Believe It's Not Butter)
-2 Tbsp flour (I think I used a little more flour just to thicken the sauce up)
-2 cups of milk (almond milk)
-2 cups of grated Gouda cheese and a little more to top it off
-Salt and pepper

Directions:
-Boil pasta to al dente finish
-Set oven to 350F
-While pasta is cooking, melt the butter in a pan, add the flour and let it simmer. Make sure to keep stirring.

-When you have a smooth consistency, add the milk and whisk it until the sauce is thick.
-Take the pan off the stove and begin to stir in the cheese, slowly. Once the sauce is smooth, add salt and pepper.

Combine the pasta and cheese sauce
-Once the pasta is finish, combine all the cheese and pasta and then pour in an ungreased baking dish.
-Bake 30 minutes until it's golden brown; halfway through, sprinkle more cheese on top and cook until even more browned.

I have to say, this was delicious. It had a sharp taste, from the Gouda and it was very rich because of the thick cheese sauce. I was honestly surprised at good it was because I have a tendency to mess things up once and while.

I will definitely be making this recipe again!
