Breakfast is my favorite meal of the day...if I could I would eat breakfast food all day and every day, and some days I do. I've always said that the beauty of WW is that you can eat regular foods and not feel guilty about it because it's all about portion control.
I love what I classify as 'aggressive' foods; sandwiches with chicken cutlets, french fries, and gravy or a hashbrown waffle -- something that is different, unique, and a little bit out there. These foods are also very unhealthy so one of my favorite things to do is hack recipes like this and find fun ways to eat the foods I love.
That's where today's recipe comes in. Wonton and eggroll wrappers are a great way to hack your favorite foods on WW; they're low points and so versatile... it's pretty genius when you think about it. I also didn't realize that these products are available in almost all grocery stores so they're accessible.
I won't take credit for this recipe as it was inspired by others but I didn't follow someone else's exact recipe for this meal... it is just something I easily whipped up.

For reference, I'm on the Blue plan so eggs are zero points.
Ingredients:
- Eggroll Wrappers (2sp for 1)
- 6 scrambled eggs
- 6 slices of Boars Head Ready Made Bacon (2sp for 3 slices)
Steps:
1. Scramble your eggs to your liking & microwave the bacon according to the package directions
2. Place egg rolls on a plate, add in a bacon slice, and a scoop of eggs (as much as you like) on top. Roll the egg rolls and seal with a drop of water.
3. Place egg rolls, seam side down, in your air fryer (you can use an oven for this but I find that air fryers are just easier and I like to use mine every chance I get). My air fryer is a Cuisinart AFR-25 Compact fryer.
4. I cooked these on 400 degrees for about 10 minutes but kept a close eye on them to make sure they didn't burn. I like them a little crispy so just pay attention to how they are browning. Also, all air fryers are different
5. Remove, let cool and enjoy!
These were so good... almost too good that I ate them all within two days, and not even for breakfast but for a snack. I am the type of person who gets cravings and aversions on a daily basis. I know when I want something and when something turns me off. These eggrolls are the perfect breakfast or snack for me because I always want bacon and the flakiness of the egg roll wrapper mixed with the eggs makes it digestible no matter my food mood.
